Duties and Responsibilities

Ø  Responsibility for all operational aspects of the kitchen.

Ø  Managing cost of sales and labour,

Ø  Planning menu items

Ø  Ensure quality and presentation of all foods

Ø  Training and developing kitchen staff

Ø  Estimates food and labour costs in consultation with management

Ø  Preparing and cooking dishes

Ø  Implements rosters within a strict budget

Ø  Receiving & storing food stocks, kitchen supplies and equipment

Ø  Assisting in the ordering and controlling of Stocks

Ø  Discussing food preparation issues with senior management

Ø  Maintaining Quality and Presentation standards

Ø  Implementing systems & procedures

Ø  Implementing and Inspecting hygiene of workplace

Ø  Maintaining & establishing safe & secure workplace

 

Skills

o   Strong interpersonal skills

o   Ability to work effectively in a face-paced kitchen

o   Ability to manage conflict and negotiate effectively

o   Ability to manage time-pressure and prioritise effectively

o   Strong organisational skills

o   Understanding of the processes of food preparation

 

Qualifications

- Minimum of Diploma in Hospitality and Certificate IV in Hospitality (Commercial Cookery)

 

Experience

 - Previous work experience in a commercial kitchen environment essential.
