Sous Chef

Palm Cove is the most northern of Cairns suburban beaches and it is perhaps the most beautiful. Situated under a canopy of melaleucas, the Palm Cove Tavern remains an oasis of family friendly entertainment and affordability. The hotel features a bustling sports bar, family friendly bistro with outdoor dining and great kids entertainment area, modern gaming room and flexible function spaces.  

We are now on the lookout for a Sous Chef to support the Head Chef  with ordering and stock control, food quality and training of junior staff.

 

Key Responsibilities

1. Overseeing menu preparation, delivery, and stock management.

2. Cleanliness, hygiene and food safety.

3. Training and mentoring junior section staff.

 

Duties

  • Menu preparation and execution, following standardised recipes, preparation procedures, cost and service procedures.
  • Responsibility for the food quality whilst managing the kitchen
  • Training and mentoring of new and junior staff to company standards. Assist with and report back to head chef regarding staff motivation and engagement.
  • Complete and allocate tasks with regard to ordering, prep-lists and cleaning rosters.
  • Ensure safety of staff and patrons.
  • Supervise staff in operating procedures for equipment as well as company rules, policies and procedures.
  • Minimise wastage and suggest procedural changes.
  • Security and maintenance of kitchen equipment and stock.
  • Manage hygienic food handling practices and food safety standards in line with company policies. Ensure cleanliness of all restaurant areas; supervise all staff in regards to Occupational Health and Safety.
  • All deliveries are received and stored safely, in line with policies.

 

Key Skills, Specifications & Experience

  • Minimum 2 years in a Sous Chef position in a similar environment
  • Demonstrated ability to manage time effectively, delegate tasks and lead junior staff.
  • Good communication skills
