Experienced Coffee Roaster

Merlo Coffee began more than 27 years ago with a simple philosophy – freshly roasted coffee served by people who are passionate about coffee.

Today, Merlo is proud to be one of Australia’s leading independently owned and operated Coffee Roasters, who supply the public and our own Merlo Coffee stores with freshly roasted coffee every day. 

We also supply more than 1,600 cafes and restaurants throughout Australia with freshly roasted coffee and in doing so, we work hard to ensure that every business serving Merlo receives the freshest coffee for their customers.

About the role

As a Coffee Roaster, you will be a part of the driving force that provides Merlo Coffee’s stores and wholesale customers with freshly roasted coffee. While roasting is performed at high frequency and distribution, join a team that strives to preserve the subtle origins of our beans in the notes of each blend and single origin.

The key responsibilities of this position include but are not limited to:

  • Roasting: Demonstrate an in-depth understanding of the functionality of the roasters and other machinery. With the ability to operate both automatic and manual cycles of all roasters: 1kgs, 30kgs, 60kgs, 120kgs, (including retail roasters).
  • Roaster Maintenance: Undertake daily maintenance/ cleaning schedules and part replacements to the coffee roasting and conveying machinery to minimise breakdown and interruptions. 
  • Quality Control: Perform cupping weekly to identify irregularities or defects in the beans. Test all green beans before purchase. Quality check coffee at every step of the production process through site checks, aroma and taste checks.
  • Reporting: Engage in daily and weekly reporting to the Head Roaster.
  • Daily Operations: Upkeep of cleanliness and OH&S checklists, stock rotation and coffee knowledge.

About you

To be successful in this exciting role, you will have:

  • Minimum Two (2) years’ experience in Coffee Roasting, preferably with Specialty Coffee.
  • Demonstrated understanding of Roast degrees, Notes and Flavours.
  • Demonstrated Mechanical and Chemical understanding of the Roasting process.
  • Proven experience in various roasting methods – i.e. convection, air and drum roasting.
  • Strong Problem-Solving skills and Understanding of OH&S.
  • A high level of Initiative and a Strong Work Ethic.
  • Ability to work both Autonomously as well as part of a team.
  • A valid Open drivers’ licence.
  • A valid Forklift Licence is desirable but not essential.
