I enjoyed my time at TAFE studying Commercial Cookery. I learnt a lot of skills from professional teachers who had many years of experience in the food industry. The course taught me to understand the importance preparation, time management, keeping good documentation, the importance of practical skills and patience.

The course outlines the basic skills needed for the industry which it does well but a lot of things that are taught aren't industry relevant any more and I feel the course needs to up the quality of what's being taught and make it more now and future relevant.

There were certain foods through the course which were very dated and not relevant but it was good in the sense it taught you the basics of most things. Some things I would've liked doing but wasn't touched on. 10 years later I hope a majority of things are still the same as its good to learn, but I feel it would be interesting to see if the department can grasp modern trends. I have my doubts though.
