What's it like to be a Knifehand?
Knifehands cut and prepare meat in packaging and processing facilities. They use knives to trim fat, remove bones and portion meat products before they are packaged and sold. A Knifehand needs an eye for detail and a good level of physical fitness to perform repetitive tasks in a cold food production environment, often at a fast pace.
Tasks and duties
- Filleting, trimming, de-boning, portioning and skinning fresh meat or seafood.
- Working in chillers and other cold or wet environments.
- Loading and unloading meat products.
- Operating meat slicers and cutting machines such as bandsaws.
- Working as part of a team in day or night shifts.
- Using knife skills and knife sharpening skills.
- Following safe food handling, OH&S and hygiene practices.
- Maintaining a clean, safe workspace.
How to become a Knifehand
You don’t need any formal qualifications to become a Knifehand, but completing a butcher’s apprenticeship may improve your career options. Industry experience is preferred. On-the-job training is provided.
- 1.Gain entry-level meat processing experience working in a restaurant, butcher’s shop or meat processing or packaging facility.
- 2.Consider completing a Certificate III in Meat Processing (Retail Butcher) (AMP30815). This usually takes four years and can be completed as part of an apprenticeship.
