What's it like to be a Butcher?
Butchers cut and prepare meat for sale. Butchers may sell to customers from a shopfront, or they can be employed by a wholesale company or smallgoods manufacturer. Butchers need a solid understanding of animal anatomy to understand how to get the most meat from each cut, reducing waste and costs.
Tasks and duties
- Cutting meat from bones, trimming fat from meat.
- Mincing meat and shaping into different products.
- Operating a sausage machine.
- Preparing cuts of meat, either for display or on request.
- Crumbing, seasoning, marinating, smoking and curing meat.
- Producing smallgoods from specially prepared and selected cuts of meat.
- Producing chutneys, pickles and seasonings from spices, herbs and sauces.
- Giving advice on preparation and cooking to customers.
- Budgeting, stock control and taking orders.
- Operating a point-of-sale terminal, scales and EFTPOS machine.
How to become a Butcher
To become a Butcher, it is usually required that you complete an apprenticeship. Entry requirements can vary, but a Year 10 education is generally required.
- 1.Complete an apprenticeship and earn a Certificate III in Meat Processing (Retail Butcher) (AMP30815). Alternatively, you may be able to complete this qualification through a TAFE or private college.
- 2.Start work in a butcher shop or in a wholesale company as an assistant to gain hands-on experience.
