What should I include in a cover letter? I find them awkward to write because I feel like it’s basically another version of a cv. So what do you guys put in cover letters?

Great question Kimberly.
I'm sure lots of people do it differently but for me I like to start by explaining why I'm interested in the job/company. Jumping on their website I try to find a couple of points about them and then weave that into my answer. I figure it shows I've taken an interest.
Then I take the key points from their job ad and respond to them based on my skills/experience.

I use standard letter that I customise to each role whereby I draw the readers attention to skills I've performed in previous roles on my resume to help them conclude I am suitable for the job. Not that it is working for me, so blind leading the blind.
I suggest from numbers of applicants on each job, there simply isn't enough quality work available so employers choose only those that exactly suit .Their expectations are often OTT e.g. New grads required to have 5yrs experience, hmmm!

Hi Kimberly, The CV is the facts and the Cover Letter is your story. The WHY HOW WHEN WHO and WHAT that relates to that role - Why you are applying, How you accomplished what is in your CV and How it relates to your application, When you can start, When you have achieved what they are are looking for, When you hope to hear back from them, Who are you and how you fit into their advertised role, and What you hope to achieve in the upcoming role. I hope this makes sense! It should only be one page.

Business Manager
As someone who’s regularly involved in the hiring process (small private company), what I’m looking for is a cover letter that isn’t written by AI (there are a few key giveaways).
I want someone to explain what they’re looking for, a bit about their personality and how/why they match the requirements of the role we’ve listed.
I don’t care about how professional it looks. I’d prefer to see that someone has put in the time to read the ad and really think about why they’re a good fit.

Use it as an opportunity to pitch yourself a valuable hire. You want to tell them how you can benefit their team and provide an example of when that has been the case in previous roles. Good opportunity to frame your interest in staying within the organisation/your intentions (moving up or just developing skills).

I try to summarise my skills and match them to the job ads, so they and give it a quick scan. If the role is a bit more creative, then I inject a bit more personality into it. I think it depends on the job, but Ive always seen it as a brief intro and a bit of a PD checklist.
